If your husband is a catfisherman, you are probably going to have some catfish in the freezer and may need a little inspiration of what to do with it after the catfish fry. This recipe has moved into regular rotation at our house and is a nice alternative to the fried version.
Notes here on how we prep our catfish before cooking.
After brining catfish in buttermilk, sprinkle fish with Blackening Seasoning.
Heat skillet over medium-high heat and add a 1 T or so of oil. Add seasoned catfish in batches (don’t overcrowd the pan) and cook until crisp and cooked through (about 3 – 5 min per side).
While fish is cooking, brush corn tortillas with vegetable oil and grill on gas grill or grill pan.
Serve fish with avocados and spicy slaw.
